Quinoa Salad with Mozzarella and Tomato

This is a great recipe sent to me by my friend and training partner, Marcel Strunk. Enjoy and Buen Provecho!

2 servings, takes about 30 minutes to prepare

Ingredients:
120g / 4.2oz Quinoa
3 Tomatoes (I like to use a handful of cherry tomatoes)
1 Onion
125g / 4.4oz Mozzarella
60g / 2.1oz Arugula
2 tbsp. Olive Oil
Pepper (Grinded)
1 Garlic (minced)
2 tbsp. Basil
Lemon Juice (about half a lemon)
Salt (optional)

1. Soak Quinoa in hot water using a strainer to remove bitter particles.
2. 2 parts water, 1 part Quinoa, bring to boil and then simmer.
3. Chop Tomatoes, Mozzarella and Onion into little cubs, chop Arugula.
4. Once Quinoa is done let it cool down.
5. Add Mozzarella, Tomatoes, Arugula and Olive Oil to Quinoa.
6. Add to taste Pepper, Garlic, Basil, Onions, Lemon Juice.
7. Enjoy with bread.

Marcel's Notes:
I use Pita or Naan (Tandoori), fill them with the mix. Any wholegrain bread will do, though.
Careful with the onions, if you don’t like the taste of raw onions, they do add a strong flavor even in small amounts!
I put salt as optional, it will prevent the potatoes from getting pale/tasteless during the boiling process.

B Mighty Oatmeal!

Ingredients:

1/2 - 3/4 cup of oatmeal (instant or rolled)
1 small banana (sliced)
1 tsp. Brown Sugar or Sugar Substitute 
1/2 tsp. of Vanilla Extract
1 tsp. Sliced Almonds  
Cinnamon (to taste)
1 tsp. Ground Flax Seed
1 tsp. Maca Powder (optional) 
1 tbsp. Greek Yogurt 


Prepare the oatmeal the way you like it.  Add the sugar, vanilla extract, cinnamon, ground flax, and maca. Stir until all the ingredients have blended well. Add the banana slices, then top it with the greek yogurt and almonds and sprinkle some cinnamon. Enjoy!

Refreshing Fig Salad


Refreshing Fig Salad

Ingredients*:

Baby Spinach
Arugula
Quinoa (previously cooked)
Dried Figs (whole figs)
Blackberries
Grape Tomatoes 
Pomegranate Vinaigrette 
Toasted Almond Slices (optional)

Thoroughly wash the spinach, arugula, and blackberries. Dice the figs and cut the grape tomatoes in half. In a bowl, mix together the spinach, arugula, and quinoa. Then top with blackberries, grape tomatoes, and diced figs. Add the vinaigrette to taste. Cover and place in the fridge for a few minutes. Add the almonds and enjoy!

*The amount of ingredients depends on the portion size of the salad.
